Bone Broth or Stock is a mineral rich infusion made by boiling bones of healthy animals. It’s a staple in the traditional diets of every culture and the basis of all fine cuisine.

Glycine helps regulate blood sugar levels by controlling gluconeogenesis (the manufacture of glucose from proteins in the liver).
If you aren’t already making bone broth regularly, I’d encourage you to start today! It is an incredibly healthy and very inexpensive addition to any diet and the homemade versions beat store bought broth in both taste and nutrition (although there is some amazing homemade organic broth you can buy pre-made now).
This is the one nutrient rich food that anyone can afford to add!
In selecting the bones for broth, look for high quality bones from grass fed cattle or bison, pastured poultry, or wild caught fish. Since you’ll be extracting the minerals and drinking them in concentrated form, you want to make sure that the animal was as healthy as possible.
This recipe for Chicken Broth is my favorite and is an adaptation of the recipe in Nourishing Traditions.
Chicken Broth Recipe:
4 to 5 pounds organic raw chicken bones*
2 tablespoons raw apple cider vinegar
¼ teaspoon Celtic or pink salt
1 – Place bones, apple cider vinegar and salt into a large stock pot and cover with filtered water (leave some room for water to boil). Wait 30 minutes to one hour before cooking (this helps draw the minerals from the bones).
2 – Bring to a boil, remove scum as it arises, reduce heat and simmer for at least 5 hours. Cook slow and at low heat. Chicken bones can cook for 24 hours. A low and slow cook time is necessary in order to fully extract the nutrients in and around the bone.
3 – You can also add in vegetables, such as onions, garlic, carrot, celery and parsley for added nutrient value (I do not add vegetables because I like my broth plain since I use in smoothies).
4 – After cooking, strain solids and save broth. After the broth cools, a layer of fat will harden on top. This layer protects the broth beneath. Discard this layer only when you are about to eat the broth.
5 – Use broth for cooking grains, beans, soups and vegetables. Or just drink from a mug or add to warm smoothies instead of milk.
* Ask your grocer for the chicken bones. Be sure to ask for the feet, as well, since that is where most collagen is found. You can also ask for the neck.
I recommend consuming eight ounces of bone broth everyday. I use it daily during cold months and I typically add it to warm smoothies, use it to sauté veggies or add to soups.
If you are looking for a real upgrade on your digestive system a bone broth fast can be a great option.
